  • Coarse salt, 500 g
  • Vegetable trimmings, herbs, etc., 400 g
Tray of cut carrots celery and parsley

Pour the salt on a GN1/2 40mm high U-Pan tray. If you work on a GN1/1 tray, double the recipe. Lay all of your trimmings on top of the salt.

On your Magistar Combi-TS, start the automatic program Vegetable Stock Powder. Load the tray and complete the drying cycle.

Remove everything from the tray and finely blend it in the Prep4You food processor.
First remove the scraper from the lid and pulse on medium speed, then put the scraper back on and work your way up to max speed.

Store the powder in an airtight glass jar or a vacuum-sealed pouch.
