  • Yogurt, 400 g
  • Honey, 200 g
  • Old carrots, 800 g

On your Magistar Combi-TS, start the automatic program Carrot Cooking. Activate the Match function by prebooking the automatic chilling cycle “Carrot Chill.” Blend the cooked carrots at max speed in the Prep4You for at least 2 minutes. Then chill in your Rapido Chiller.

Pour all the ingredients into a GN1/1 65mm high stainless-steel tray and whisk together. In the meantime, start the automatic program “Carrot Fermentation” on your Rapido Chiller and load the tray. This cycle combines fermentation and a paired chilling cycle.

If you are not using our Rapido Chiller, then use the automatic program “Yogurt Fermentation” on your Magistar Combi-TS. Once ready, chill in your blast chiller.

If you prefer to work in single portions rather than in a tray, pour your milk-yogurt-carrot mixture into single-portion glass jars and run the automatic cycle for yogurt. For a richer and creamier result, always use whole milk and substitute up to 1/4 of the milk with heavy cream. Serve your LESS-WASTE MORE-VALUE Carrot Yogurt for breakfast or dessert, or use it instead of plain yogurt for all your frozen yogurt or soft serve recipes.
