Ingredients:

  • Old eggplants, 1200 g
  • FOREVERLAND paste (or traditional 70% chocolate), 900 g
  • FOREVERLAND powder (or traditional unsweetened cocoa powder), 150 g
  • Ground almonds, 180 g
  • Whole eggs, 9 pc
  • Honey, 300 g
  • Baking powder, 48 g
  • Salt, 12 g

On your Magistar Combi Oven, start the automatic program “Eggplant Cooking.”

Prebook the automatic chilling cycle Eggplant Chill.

Cut the eggplant into half lengthwise, then pierce the skin with a fork. Bake on a U-pan tray with the cut side up, then chill.

Remove the pulp from the skin, then place the pulp on a perforated tray in order to drain off the excess liquids.

In the Prep4You food processor, blend the Foreverland paste together with the honey at max speed using the pulse function.

Add the eggplant and blend until smooth and homogeneous. Add the eggs and blend again. Add the almonds, salt, Foreverland powder and baking powder. Blend until smooth.

In the meantime, start the automatic program Brownie Cooking on your Magistar Combi Oven TS.
Activate the Match function by prebooking the automatic chilling cycle Brownie Chill or Brownie Freeze according to your needs. Spread the brownie mixture on a GN1/1 U-pan 40mm tray and bake. Chill. Cut into your desired shapes.
